Bavette steak comes from the bottom sirloin, right near the flank, and it’s sometimes labelled as “flap meat” in our butcher shops. Don’t let the name throw you off—this is a high-quality, deeply beefy cut that takes well to bold seasoning and quick, high-heat cooking.
